Rice Parcels


These amazing rice parcels are one of our favourite dinners. It’s the dinner where you can load up on all your leftover veggies and it’s super quick and easy to make. Who doesn’t love a dinner that is super quick to whip up? You can sub out any of the below veggies and add whatever you please. You can also add any type of meat. We love adding some twiggy sticks or chicken or you could even do prawns however you’d need to amend the cooking time / allow time to precook the meat.


Prep Time: 20-25 mins
Cook Time: 25-30 mins
Serves: 4 with lunch leftovers

 
Ingredients:
2 bunches of Bok Choy
Bunch of Broccolini
Punnet of Cherry Tomatoes, halved
Red Onion, diced
Capsicum, cubed
Can of Corn Kernels
Can of Chickpeas
3 cups of brown rice
100g of grated cheese
Jar of pesto
Salt & Pepper
Baking Paper
Alfoil


Method:

Step 1: Pre-set your oven to 180 degrees

Step 2: Cook your brown rice as per the instructions on the rice packet

Step 3: Cut all your veggies into bite sized pieces as nominated in the ingredients list

Step 4: Mix all your veggies together in a bowl

Step 5: Rip some baking paper and alfoil into 15cm x 15cm squares

Step 6: Place a piece of foil down first and a piece of baking paper on top

Step 7: Place approximately half a cup of brown rice onto the middle of the baking paper

Step 8: Place half a cup to ¾ of a cup of your veggies on top of the brown rice

Step 9: Sprinkle some cheese on top, add a few teaspoons of pesto and salt and pepper

Step 10: Now it’s time to wrap up these delicious parcels. Take the opposite corners and pull together so that the corners meet together in the middle of your rice parcel. Then with your other hand, bring up another corner then another and scrunch all the corners together until it creates a nob like handle in the middle.

Step 11: Place your parcels on a tray and place in the oven for half an hour

Step 12: To serve, place a parcel on your plate and slowly open. Be careful of your fingers as the steam comes out

Step 13: ENJOY!!!
