Spinach & 3 Cheese Muffins

If you like savoury muffins, you’re absolutely going to love these. The 3-cheese combo is delicious; but if you’re not a fan of haloumi (what … who doesn’t like it!) just add a bit more feta instead. Best eaten whilst still hot or they are extra yummy if you toast them in a fry or grill pan. Heat the pan, melt a dob of butter, slice the muffin in half and place in the pan. Cook for a few minutes until browned. YUMMMMMMM!  Time: Make time - 20 minutes, cook time – 20 mins. Serves: Makes 12 large muffins. AR’s BBB – Best Banana Bread

We aren’t kidding. This is the BBB because it’s soooooo easy to make, turns out perfect every time and tastes incredibly delicious. We use a hand-held electric beater, if you don’t have an electric mixer you can make it by hand, it will need a bit of bicep work but it’s doable. We have suggested a few options so that you can adjust the recipe to suit your taste and likes.Eat cold or better still toast it to melt the choc chips just a little more. YUM! Guaranteed to please EVERYONE! Plus, you can freeze the cooked BBB for later use and it’s just as delicious, although you’ll have to be quick to store it before it all gets eaten....
